I have been reminded that I totally spaced out on about five of the most intense years of my life. There was this Little Bakery in the Mall. Also known as Le Chatel. I got long hours, sore feet, and the assurance to know that one way or another the JOB WILL GET DONE. And probably the scariest day of my life was the first time I baked on the day after Thanksgiving. If you can make it through food service on Black Friday, you can do just about anything.
I also found a good friend. Bless you Lisa.

I remember you mentioning this job before. I'll bet it helped turn you into the Baker that you are today. That and Brother Juniper's Bread Book.

You are one of the bravest people I know. The mall on Black Friday, I get shortness of breath just thinking about it. No, really, Any retail establishment on that day is insane and you were trying to feed the masses. I can't imagine.....
Have a great weekend, Leigh
I admire the gumption it took to do that. I'm not a baker, how that is I have no idea. I love cooking homemade meals, do the entire Thanksgiving dinner from scratch, but baking just doesn't do it for me. However my daughter she makes up for it, she loves to bake. Guess who I'm nominating for pies this coming Thanksgiving? (winks) (Hugs) Indigo
